A Korean friend of mine agreed to teach me how to make Kimchi recently. Kimchi is the ubiquitous side dish that Koreans eat at almost every meal. It is made with Napa Cabbage - which is similar to Bok Choy - and a ton of garlic, red peppers and other spices. As a lover of spicy ethnic foods, I am a huge fan of Kimchi and have started to eat it almost daily. Health magazine named kimchi in its list of top five "World's Healthiest Foods" for being rich in vitamins, aiding digestion, and even possibly reducing cancer growth. So I have that going for me, which is nice. Hooray for Kimchi - 건배(乾杯!!!
